Butter-Free Chocolate Pudding

Ingredients:
  • Milk (250g)
  • Sugar (50g)
  • Cornstarch (20g)
  • Dark chocolate (70g)
Instructions:

Pour the milk into a saucepan and heat it until it almost boils. Meanwhile, partially melt the chocolate (about 1 minute in the microwave) and mix it well.
Combine the melted chocolate with the cornstarch to avoid lumps, stirring with a whisk (you can add a spoonful of the heated milk to facilitate melting).
After mixing well, add everything to the saucepan with the milk, kept on low heat. Cook the pudding for a few minutes (continue stirring), then remove from heat and divide it into containers.
Let it cool and serve.

Fritters

Ingredients:
  • Flour (300g)
  • Vegetable oil
  • Butter (100g)
  • Lemon
  • Eggs (8)
  • Water (500ml)
  • Sugar
Instructions:

Pour the water into a saucepan over medium-low heat and add the butter. Turn off the heat before it reaches boiling. Add the flour, reignite the flame, and stir for 2-3 minutes to prevent the mixture from sticking to the pot.
Transfer to a bowl and let it cool for two hours. Grate some lemon zest into the cooled mixture and add 4 grams of sugar. Add one egg at a time, blending with an electric mixer (do not add the next egg until the mixture is fully blended, repeat the process for each egg).
Bring the oil to a boil in a preferably deep pot over medium heat. Spoon teaspoons of the mixture into the pot, using your fingers to help.
Once the fritters turn amber in color, remove them from the pot and sprinkle them with sugar.
